Pears poached in red wine

4 pears

juice of ½ lemon

1 teaspoon juniper berries

1 teaspoon ground coriander

2 tablespoons brown sugar

2 × 125ml glasses red wine

4 tablespoons virtually fat free fromage frais to serve

1 Peel and core the pears. Place in a bowl with the lemon juice and toss well. Stand the pears upright in a small saucepan just big enough to accommodate them.

2 Add the remaining ingredients and simmer gently for 25 minutes until the pears are soft and the liquid has reduced. Remove the pears and continue to reduce the sauce to a thick syrup.

3 Serve hot or cold with the fromage frais.


TIP Tossing the peeled pears in lemon juice prevents them from turning brown
