Peach and plum bruschetta

2 peaches

2 dark plums

juice of 1 orange

1 tablespoon caster sugar

1 teaspoon vanilla extract

1 tablespoon maple syrup

4 thin slices brown bread

4 mint leaves to garnish

4 teaspoons virtually fat free fromage frais to serve

1 Remove the centre stones from the peaches and plums. Cut the fruit into small wedges and place in a small saucepan with the orange juice, caster sugar and vanilla extract. Poach gently over a low heat until the fruit is soft.

2 Heat a non-stick frying pan, add the maple syrup, then the bread slices and cook lightly on both sides until slightly toasted.

3 Arrange the toasted bread on serving plates and top with the poached fruits.

4 Garnish with the mint leaves and serve warm with a blob of fromage frais.


TIP For extra spice, add a pinch of ground cinnamon to the fruit during cooking
