1 small egg, beaten

1 tablespoon caster sugar

2 tablespoons plain flour

1 teaspoon baking powder

1 heaped teaspoon honey

zest of ½ lemon

1 Mix together the beaten egg, caster sugar, flour and baking powder.

2 Lightly grease 2 microwave-safe moulds or cups. Add some honey to the bottom of each mould and spoon the pudding mixture on top. Cook on high power in the microwave for 1½–2 minutes.

3 Allow to stand for 1 minute, then turn out onto a serving plate and drizzle with the lemon zest.
