Fresh strawberry fool

400g strawberries

1 tablespoon sherry

1 × 75g pack low-fat instant custard

2 tablespoons low-fat yogurt

1 Place the strawberries and sherry in a small saucepan and heat until warm. Remove from the heat.

2 Make up the custard with 450ml boiling water, and allow to cool before folding in the yogurt.

3 Pour the strawberries and sherry into a smoothie maker or liquidiser and blend until smooth.

4 Combine the strawberry mixture with the custard and pour into glasses. Chill until ready to serve.


TIP You can use fresh or frozen fruit in this recipe
