This sauce is very simple to make and will accompany any lamb dish wonderfully.

Ingredients
The leaves from a large bunch of mint
1 tablespoon caster sugar
4 tablespoons red wine vinegar
1 tablespoon olive oil

Method
- Finely chop the mint leaves and add them to a mortar and pestle, give them a good pounding and add the sugar. Allow this to stand for 10 minutes so the sugar draws out some juice from the mint.
- Give it another good pounding and stir in the red wine vinegar and oil.
- Transfer to a small serving jug with a teaspoon to serve.
