Cherry Tomato and Herb Heart-Healthy Omelette
This is mainly an egg white omelette, although you can of course make a regular one including the egg yolks. However, once you give this a try you will see that it is just as good without the yolks and much better for your heart. I add in one yolk just for colour. The sweetness of the cherry tomatoes really comes through to meet the sharp herbs. I normally use herbs like chives, flat leaf parsley or mint – or a mix of them all.

Ingredients
4–6 cherry tomatoes
Olive oil
Sea salt and black pepper to season
1 large egg, plus 3 egg whites
A handful of chopped mixed herbs of your choice
Cheddar cheese (optional)
Method
- Halve or quarter the cherry tomatoes, pour some oil into a non-stick pan and tip the tomatoes in. Season them well and fry them off for 1–2 minutes until just soft.
- In the meantime put the grill onto a high heat. Separate the eggs, then lightly beat the whites and one yolk in a bowl.
- Scatter the chopped herbs over the tomatoes and pour the beaten eggs over.
- Quickly stir the eggs with a silicon spatula to spread them out and make sure they cook evenly. Take off the heat as they start to set, grate a little cheese over the top (if using) and place under the grill for 2–3 minutes. Slide onto a warm plate and serve immediately.
