Beautiful Potato and Leek Soup
This is my sister Andrea's recipe and every time I go up home I look forward to having it for lunch. Served with some crusty bread this is a tasty and filling soup – simple comfort food at its best!

Ingredients
1 large onion
4 large leeks
1 clove of garlic
2 medium potatoes
50g butter
850ml chicken stock
275ml skimmed/semi-skimmed milk
Salt and pepper to season
Method
- Roughly chop the onion and leeks. Peel and chop the garlic. Peel and cube the potatoes.
- In a large saucepan, over a medium heat, sweat the onion and garlic in the melted butter for 5 minutes.
- Add the leek and sweat for a further 10 minutes, stirring occasionally to stop it sticking.
- Add the stock, milk and potatoes and season well. Bring to the boil for 5 minutes, then simmer for another 5 minutes.
- Allow to cool slightly, then blitz with either a hand blender or in batches in a jug blender until silky smooth. Return to the heat and once hot, serve.
