Grilled Turmeric Chicken and Cottage Cheese Rolls
I'm not a great lover of cottage cheese, but a dash of Tabasco sauce enlivens it into a new taste altogether.

Ingredients
150g tub of cottage cheese
Tabasco sauce
1 large chicken fillet
Olive oil
1 teaspoon turmeric
1 red pepper
2 crusty bread rolls
A small bunch of coriander leaves
Black pepper to season
Method
- Empty the cottage cheese into a small mixing bowl and add three dashes of Tabasco sauce, give it a quick stir and set aside.
- Brush the chicken fillet with oil, then sprinkle all over with turmeric, massage it in, place onto a grill and wash your hands. Grill the chicken for 6–8 minutes each side on a medium/high heat.
- In the meantime de-seed and thinly slice the red pepper. Halve the bread rolls lengthways; you can toast them if you like.
- Slice the chicken when cooked through.
- Generously spread the cottage cheese onto the cut bread on one side, place some sliced red pepper on top and then add some chicken slices. Top with a sprinkle of coriander leaves, season with black pepper and top with the other half of the roll.
