Quick-Fix Hummus
Hummus is a great snack or light lunch served with some breadsticks, cracker bread or pitta bread ... even vegetable sticks for an ultimate health kick.

Ingredients
400g can of chickpeas
1 clove of garlic
1 lemon
1 teaspoon cumin seeds
A pinch of salt
2 tablespoons extra virgin olive oil
1 teaspoon paprika
Method
- Drain and rinse the chickpeas and set a few to one side to be used as a garnish.
- Put the remaining chickpeas in a food processor, mince in the garlic and add the juice of half the lemon along with the cumin seeds, salt, oil, paprika and 5 tablespoons of water.
- Whizz up until you get a smooth consistency.
- Taste and add more seasoning (salt and lemon juice) if required.
- Serve in a bowl with a sprinkling of the whole chickpeas and a little more paprika.
