Sticky Bacon Ribs
These ribs are a wonderful snack or a starter for a meal. They can also be started off in the oven and finished off on a BBQ for that lovely smoky flavour.

Ingredients
1kg bacon ribs
For the marinade
4 tablespoons olive oil
2 tablespoons red wine vinegar
2 tablespoons dark soy sauce
1 tablespoon fish/oyster sauce
1 tablespoon Worcestershire sauce
5 tablespoons honey
1 teaspoon Chinese five-spice
1 teaspoon chopped sage
1 tablespoon cayenne pepper
A few cloves of garlic, peeled
A big pinch of black pepper
Method
- If the ribs are still in a rack, carefully cut down between the bones to separate.
- Mix all the ingredients for the marinade in a mixing bowl. Place the ribs in an even layer on a large roasting tray and pour over the marinade. Toss the ribs so they are all well coated. Cover with cling film and place in the fridge for as long as possible. Marinade for at least an hour but preferably overnight to let all the wonderful flavours combine and infuse into the meat.
- When you’re ready for cooking, preheat the oven to 200ºC. Cook the ribs for 35 minutes, take them out halfway through cooking and give them a toss around. You can then finish off on a BBQ or under the grill to caramelise the sticky marinade.
- Serve with some lightly stir-fried vegetables of your choice.
