Oven-Roasted Lamb Chops with Thyme and Garlic
I love getting fresh lamb chops from my local butcher for this dish. Any type of chop will work well here for a very easy, flavoursome dinner.

Ingredients
1 bulb of garlic
Olive oil
3–4 sprigs of thyme
6–8 lamb chops
Sea salt and black pepper to season
Glass of white wine
Soy sauce
1 tablespoon honey
Method
- Preheat the oven to 180ºC.
- Put a frying pan on a hot hob and cut the garlic bulb in half and place on the pan cut side down along with a splash of oil and 2 sprigs of thyme. Season the chops with salt and pepper and put on the hot pan just to sear both sides. When all the chops are seared put them into a suitable-sized oven dish.
- Keep the pan on the heat, pour in the glass of white wine and reduce by about half, stirring with a spatula, then add a good splash of soy sauce and the honey. Bring to the boil and then pour over the chops and place in the oven.
- They should take 20–25 minutes, check halfway through and turn them over.
- Serve with a fresh garnish of the remaining thyme and some steamed baby potatoes.
