Pork and Apple Stir-Fry
Stir-fries are super quick to cook once the preparation work is out of the way.

Ingredients
2 boneless pork chops
Sea salt and black pepper to season
1 medium onion
2 medium carrots
2 sticks of celery
1 red pepper
A thumb-sized piece of ginger
100ml cider
2 tablespoons dark soy sauce
1 teaspoon cornflour
Rapeseed oil
5 tablespoons apple sauce (shop-bought or home-made)
Method
- Trim any excess fat from the pork chops and discard, then slice the pork into finger-thick strips and season with sea salt and black pepper.
- Peel and slice the onion, slice the carrots and celery, de-seed the red pepper and slice it, and peel and finely dice the ginger.
- In a small mixing bowl combine the cider and soy sauce, then whisk in the cornflour.
- Heat a wok on a high heat and add a good glug of oil. When the oil is hot add the pork strips and stir-fry until no longer pink. Add in the prepared vegetables, stir-fry everything for a further 3–4 minutes before adding the apple sauce and the cornflour mix.
- Cook for another 3–4 minutes until the sauce has thickened. Serve with some cooked rice or egg noodles.
