Prawn Fried Rice
This dinner is a great home-made and healthy alternative to a Chinese takeaway. Please don't feel like it is only prawns that can be used .... all recipes can be altered to suit your own taste. You can use chicken, turkey, beef, pork or whatever else tickles your fancy. I just use a bag of small frozen prawns, which makes it really quick and easy.

Ingredients
120g brown or wholegrain rice
A small head of broccoli
1 clove of garlic
1 large shallot
1 slice of cooked ham (optional)
Olive oil
250g bag of frozen prawns
1 medium egg
A handful of peas
2 tablespoons dark soy sauce
Method
- Cook the rice according to the instructions in the section 'Rice Three Ways'.
- Cut the broccoli into small florets, peel and finely chop the shallot and garlic, and shred the ham (if using).
- Add a little oil to a hot wok or large frying pan, add in the garlic and shallot and fry for a minute without colouring, then add in the prawns. Fry these for 2 minutes until coloured all over, then pick them out with tongs and set aside.
- Add a little more oil to the pan and crack in the egg, move it around and break it up with a spatula until cooked, then add in the broccoli and peas. Fry all this for 3–4 minutes before adding in the cooked rice.
- Continue stirring the contents of the pan/wok for a minute, then add in the soy sauce, ham (if using) and prawns, give this all a good mix around for another 2 minutes, then serve in warm bowls.
