1. Basmati Rice with Cinnamon, Cardamom and Flaked Almonds

Ingredients
1 cup basmati rice
1 cinnamon stick
5 cardamom pods
1 tablespoon onion seeds
A small handful of flaked almonds
Method
- Cook the rice as described above, but add the cinnamon stick and bruised cardamom pods at the start so the flavours infuse during cooking.
- Once the rice has steamed add the onion seeds and flaked almonds and fluff up the rice using a fork. Remove the cardamom pods and cinnamon stick before serving.
