2. Brown rice with Garlic, Nutmeg and Cinnamon

Ingredients
1 cup brown rice
4 cloves of garlic
A knob of butter and splash of olive oil
Half a nutmeg, grated
1 teaspoon ground cinnamon
Method
- Cook the rice as described, remembering that brown rice takes longer and absorbs more water.
- Peel and finely slice the garlic cloves. Add the butter and oil to a large frying pan on a medium heat and when hot add the garlic, fry it for 2–3 minutes and add the nutmeg and cinnamon, cooking for a further minute. Add in the cooked rice and stir or toss until it is all coated with the wonderful flavours and heated through.
