Chocolate chip brownies
Not much can be said about these legends except ... enjoy chocolatey goodness responsibly!

Ingredients
150g plain chocolate
225g softened butter
100g white chocolate
75g pistachio nuts
225g self-raising flour
125g caster sugar
4 medium eggs
Icing sugar (for dusting)
Method
- Preheat the oven to 180ºC.
- Line a 33cm/13in x 23cm/9in baking tray with baking paper.
- Break up the plain chocolate into pieces and place in a heatproof bowl along with the softened butter. Place the bowl over a saucepan of simmering water. Stir until melted, then leave to cool slightly.
- Chop the white chocolate and pistachio nuts.
- Sift the flour into another bowl and add the caster sugar, then set aside.
- Beat the eggs and stir into the melted chocolate, then pour the mixture into the flour and sugar and beat together well.
- Stir in the chopped nuts and white chocolate, then pour into the baking tray. Even out the mixture with a spatula. Bake in the oven for 30–35 minutes until risen and once pressed with your finger it springs back.
- When cooked, leave to cool in the tin for 15 minutes, then turn out onto a cooling rack and dust with icing sugar. Allow to cool fully before cutting into twelve pieces.
