Summer Berry, White Chocolate and Rum Crumble
This is a beautiful simple dessert with fresh flavours that will leave you longing for more. Even without the crumble topping this is delicious cooked in the oven for about 8 minutes and served with ice-cream.

Ingredients
300g strawberries
150g raspberries
150g blueberries
150g white chocolate
A sprinkle of white rum (optional
and the amount is flexible!)
For the crumble
150g plain flour
75g butter
75g soft brown sugar
½ teaspoon cinnamon
50g chopped almonds
Method
- Wash the fruit, hull and halve the strawberries.
- Pour the prepared fruit into a suitable-sized oven dish or if you prefer individual crumbles, four smaller oven dishes. Roughly chop the white chocolate and sprinkle over the fruit. Add the splash of rum (if using).
- For the crumble, place the flour into a mixing bowl, cube the butter and rub it in with your fingers until it resembles fine breadcrumbs. Stir in the sugar, cinnamon and almonds until well combined.
- Sprinkle over the topping and bake in the oven for about 20 minutes or until the crumble is golden brown and the fruit is bubbling around the edges.
- Serve with fresh whipped cream or ice-cream.
