Coleslaw
This coleslaw is quick to make and comes in very handy, especially during BBQ season.

INGREDIENTS
½ white cabbage
2 carrots
½ onion
6 tablespoons low-fat natural yogurt
2 tablespoons low-fat mayonnaise
½ teaspoon Dijon mustard

METHOD
- Using a box grater or the grater attachment of a food processor, grate the cabbage, carrots and onion.
- In a large mixing bowl stir together the yogurt, mayonnaise and Dijon mustard, then add in the grated vegetables and combine thoroughly.
- This mix will keep in the fridge for three days.
