Seared Corn on the Cob in Honey and Balsamic Vinegar
This is a simple way to inject some flavour and style to a simple vegetable. It gives it a sticky sweet and charred flavour as though the corn had come off a BBQ.

INGREDIENTS
2 large fresh corn on the cob
2 tablespoons honey
2 tablespoons balsamic vinegar

METHOD
- Cut the cobs carefully into four equal pieces with a heavy, sharp knife, then place in a large saucepan of cold, salted water. Bring to the boil, then simmer for 2 minutes.
- Drain in a colander and steam dry for 2 minutes.
- Heat a pan or preferably a griddle pan and place the corn on it. Then drizzle over both the honey and balsamic vinegar and give it all a good shake around.
- Fry them for about 5 minutes on a high temperature, moving them around to get coloured all over.
