Covering Cupcakes with Poured Royal Icing

Cupcakes can be given a fun finish simply by pouring coloured royal icing over the top. For a vibrant plate of cupcakes, use a variety of colours.

Make sure the cupcakes rise to just under the top of the paper cupcake cases to leave space for the icing. Make a batch of royal icing (to add colour), then slowly pour it onto the cupcakes until it almost reaches the top of the paper cases.

Tap the cupcakes on the work surface to remove any air bubbles and then quickly add any decorations such as flowers, if using. Otherwise, let the icing dry before piping a decoration.
