Orange Polenta Cake
with Pistachio Ganache

YOU WILL NEED: two quantities Orange polenta cake; Pistachio ganache; three quantities Cream cheese frosting

Cream cheese frosting preparation time: 15 minutes decorating time: 50 minutes

After filling the cakes with the pistachio ganache apply a crumb coat and leave to set for 30 minutes.

Make three quantities of cream cheese frosting and divide it among four bowls. Colour three of the frostings with different shades of green and leave one plain.

Apply the frosting to the side of the cake in strips using a palette knife, starting with the darkest colour at the base and finishing with plain white for the last 2 cm (¾ in) and the top.

With a palette knife first smooth the cake and then with the tip make an indention all the way around starting from the top.

Decorate the top of the cake with small coloured flags if you like.

Use a palette knife to apply the frosting strips.

Smooth the frosting with the palette knife.
