Decorating with Sugarpaste

Creating your own cutters for use with sugarpaste (fondant) is great fun. The consistency of sugarpaste means it is very versatile, so extremely easy to use to decorate cookies.

1/// You can create your own bespoke cutters simply by drawing out the shapes of your choice on a piece of cardboard or heavy paper and then cutting around them with scissors.

2/// Roll out the sugarpaste (fondant) on a work surface lightly dusted with icing (confectioners’) sugar to a thickness of 5 mm (¼ in). Place your chosen cutter on top and, with the point of a sharp knife, cut around the template.

3/// Lightly cover the bottom of the sugarpaste shape with edible glue and then carefully place it onto the cookie. Press down to secure it in position.
