Cheesy Bacon Wrapped Shrimp

Ingredients
      16 extra-large raw shrimp, peeled, deveined, and butterflied
      16 (1 in) cubes cheddar jack cheese
      16 slices of bacon, cooked half way
      ¼ cup BBQ sauce
Directions
  1. ​​ Preheat the air fryer to 350 degrees F. 
  1. ​​ Stuff each shrimp with a cheese cube and wrap with a slice of bacon.
  1. ​​ Secure the bacon to the shrimp with a toothpick.
  1. ​​ Brush the wrapped shrimp with BBQ sauce and place in the air fryer.
  1. ​​ Cook for 6 minutes. 
  1. ​​ Remove and brush with additional BBQ sauce.
  1. ​​ Serve and enjoy!

Salmon Quiche
Preparation time: 60mins

Ingredients
      2 cups salmon, skinless and cubed
      1 tsp. salt
      ¼ tsp. ground black pepper
      1 (9 in) premade pie crust
      3 large eggs
      1 tbsp. Dijon mustard
      ¼ cup green onion, chopped
      ½ cup shredded mozzarella cheese
      4 tbsp. heavy cream
Directions
  1. ​​ Preheat the air fryer to a temperature of 350 degrees F 
  1. ​​ Then, Season the salmon with salt and pepper to your taste. Set aside.  Place the pre-made pie crust into individual quiche pans and press into the sides of the pans.
  1. ​​ Trim off any overhanging crust.  Trim the dough onto the edges of the pan you intend to use or just let it stick out. 
  1. ​​ Place the cubed salmon into the crust and top with the green onion and mozzarella.  In a mixing bowl, combine the heavy cream, eggs, and mustard.
  1. ​​ Carefully pour over the salmon, being careful not cause the mixture to overflow. 
  1. ​​ Carefully slide the quiche into the fryer basket and cook for 20 minutes. 
  1. ​​ Let rest for 10 minutes before serving.

Cedar Plank Salmon

Ingredients
      4 untreated cedar planks
      1½ tbsp. of rice vinegar
      2 tbsp. sesame oil
      ½ cup soy sauce
      ¼ cup green onions, chopped
      3 cloves garlic, minced
      1 tbsp. fresh ginger grated
      2 lb. of salmon fillets, skin removed
Directions
  1. ​​ Submerge the cedar planks in water and soak for 2 hours. 
  1. ​​ In a shallow dish, combine all ingredients except salmon and mix well. 
  1. ​​ Add the salmon to the marinade and coat each side.
  1. ​​ Marinate, refrigerated, for 30minutes. 
  1. ​​ Preheat fryer to 350 degrees F. 
  1. ​​ Remove the cedar planks from the water and pat dry.
  1. ​​ Place on the fryer basket and place the salmon on top
  1. ​​ Cook for 15 minutes.  Serve and enjoy

Air Fried Calamari and Tomato Pasta

Ingredients
      2 cloves garlic, minced
      1 lb. sliced calamari, cut into rings
      1 egg 1 cup Italian bread crumbs
      1 tbsp. of olive oil
      ½ cup diced onion
      2 tsps. Italian seasoning
      2 (15 oz.) cans diced tomatoes, drained
      1 lb. dry angel hair pasta
      ½ cup grated parmesan
Directions
  1. ​​ Preheat fryer to 360 degrees. 
  1. ​​ Dip the calamari into the egg and then into the breadcrumbs. Coating all sides.
  1. ​​ Place in the air fryer basket and drizzle with olive oil. Cook for 15 minutes.  Meanwhile, bring a large pot of water to a boil.
  1. ​​ Add the pasta and cook for 10 minutes or until tender. Drain.  Combine the pasta, garlic, onion, Italian seasoning, and diced tomatoes.
  1. ​​ Heat just until hot. Spoon on to a serving plate. 
  1. ​​ Remove calamari from air fryer and place on top of pasta. Sprinkle with Parmesan

      ½ cup yellow onion, sliced thin

      1 tbsp. honey 2 tbsp. rice vinegar

  1. ​​ Preheat the fryer to 350 degrees F. 
  1. ​​ Season the fish with half the salt and drizzle with half the oil. Cook for 15 minutes. 
  1. ​​ Meanwhile, heat the remaining oil in a large skillet.
  1. ​​ Once hot add the mushroom onion and garlic.
  1. ​​ Cook until onions are soft.  Stir in the soy sauce, chili flakes, honey, and vinegar. Simmer for 1 minute. 
  1. ​​ Remove fish from the fryer and top with mushroom sauce.

Air Fryer Fried Louisiana Shrimp Po Boy with Remoulade Sauce
Preparation time: 30mins

Ingredients
      4 French bread hoagie rolls I used 2 loaves, cut each in half
      2 cups shredded lettuce
      1 pound shrimp, deveined I usually go for the biggest shrimp I can find because they shrink a little when you cook them
      1/2 cup Louisiana Fish Fry
      1/4 cup buttermilk
      8 tomato slices
      1 tsps. Creole Seasoning I used Cony Chachere
      1 tsps. butter optional
Remoulade Sauce
      1/2 cup mayo I used reduced-fat
      1 tsp. minced garlic
      1/2 lemon juice of
      1 tsp. Worcestershire
      1/2 tsp. Creole Seasoning I used Cony Chachere
      1 tsp. Dijon mustard
      1 tsp. hot sauce
      1 green onion chopped
Directions
Remoulade Sauce
  1. ​​ Combine all of the ingredients in a small bowl. Refrigerate prior to serving while the shrimp cooks.
Shrimp Po Boy
  1. ​​ Season the shrimp with the seasonings.
  1. ​​ Pour the buttermilk in a bowl. Dip each of the shrimp in the buttermilk. Place the shrimp in a Ziploc bag and in the fridge to marinate. Marinate for at least 30 minutes. I prefer overnight.
  1. ​​ Add the fish fry to a bowl. Remove the shrimp from the bags and dip each into the fish fry. Add the shrimp to Air Fryer basket.
  1. ​​ Preheat Air Fryer to 400 degrees.
  1. ​​ Spray the shrimp with olive oil. Do not spray directly on the shrimp. The fish fry will go flying. Keep a nice distance.
  1. ​​ Cook the shrimp for 5 minutes. Open the basket and flip the shrimp to the other side. Cook for an additional 5 minutes or until crisp.
  1. ​​ Preheat oven to 325 degrees. Place the sliced bread on a sheet pan.
  1. ​​ Allow the bread to toast for a couple of minutes.
  1. ​​ Optional step if you prefer butter: Melt the butter in the microwave. Using a cooking brush, spread the butter over the bottom of the French bread.
  1. ​​ Assemble the po boy. Spread the remoulade sauce on the French bread.  Add the sliced tomato and lettuce, and then the shrimp.

Air Fryer 3 Ingredient Fried Catfish
Preparation time: 65mins

Ingredients
      4 catfish fillets
      1/4 cup seasoned fish fry I used Louisiana
      1 tbsp. olive oil
      1 tbsp. chopped parsley optional
Directions
  1. ​​ Preheat Air Fryer to 400 degrees.
  1. ​​ Rinse the catfish and pat dry.
  1. ​​ Pour the fish fry seasoning in a large Ziploc bag.
  1. ​​ Add the catfish to the bag, one at a time. Seal the bag and shake. Ensure the entire filet is coated with seasoning.
  1. ​​ Spray olive oil on the top of each filet.
  1. ​​ Place the filet in the Air Fryer basket.  (Due to the size of my fillets, I cooked each one at a time). Close and cook for 10 minutes.
  1. ​​ Flip the fish. Cook for an additional 10 minutes.
  1. ​​ Flip the fish.
  1. ​​ Cook for an additional 2-3 minutes or until desired crispness.
  1. ​​ Top with parsley

Air Fried Dragon Shrimp

      1 lb. defrosted shrimp (21-25 count)
Directions
  1. ​​ Turn your air fryer to 330F. Place a 6 x 3 metal pan in it and allow the oven to start heating while you gather your ingredients.
  1. ​​ Place the butter, garlic, and red pepper flakes into the hot 6-inch pan.
  1. ​​ Allow it to cook for 2 minutes, stirring once, until the butter has melted. Do not skip this step. This is what infuses garlic into the butter, which is what makes it all taste so good.
  1. ​​ Open the air fryer, add all ingredients to the pan in the order listed, stirring gently.
  1. ​​ Allow shrimp to cook for 5 minutes, stirring once. At this point, the butter should be well-melted and liquid, bathing the shrimp in spiced goodness.
  1. ​​ Mix very well, remove the 6-inch pan using silicone mitts, and let it rest for 1 minute on the counter. You’re doing this so that you let the shrimp cook in the residual heat, rather than letting it accidentally overcook and get rubbery.
  1. ​​ Stir at the end of the minute. The shrimp should be well-cooked at this point.
  1. ​​ Sprinkle additional fresh basil leaves and enjoy.
