Pecan Crusted Salmon

Ingredients
      ½ cup pecans
      3 tbsp. fresh chopped parsley
      1 tsp. salt
      ½ tsp. ground black pepper
      3 tbsp. Dijon mustard
      3 tbsp. olive oil
      1 tbsp. honey
      ½ cup Panko breadcrumbs
      4 salmon filets 1 tbsp. lemon juice
Directions
  1. ​​ Preheat air fryer to 390 degrees F. 
  1. ​​ In a small bowl combine the mustard, oil, and honey.  Combine the Panko, pecans, parsley, salt, and pepper in a food processor and process until crumbs are fine. 
  1. ​​ Dip the salmon in the mustard mixture then dip the salmon into the pecan mixture, pressing the pecans into all sides of the fish. 
  1. ​​ Place the coated salmon in the fryer basket and cook for 10 minutes.
  1. ​​ Drizzle with lemon juice. 
  1. ​​ Serve and enjoy!

Broiled Tilapia Done

Ingredients
      1 to 1 1/2 lb. tilapia fillets
      molly mcbutter or butter buds
      light spritz of canola oil from an oil spritzer
      Old Bay seasoning,
      lemon pepper
      salt
Directions
  1. ​​ Thaw fillets, if frozen. Spray the basket of your air fryer with cooking spray.
  1. ​​ Place fillets in the basket (do not stack them) and season to taste with the spices. Spray lightly with oil.
  1. ​​ Set temperature at 400 degrees and set timer for 7 minutes.
  1. ​​ When the timer goes off, check for doneness. Fish should flake easily with a fork.
  1. ​​ Serve and enjoy with your favorite veggies.

Prawn Curry
Preparation time: 15mins

Ingredients
      2 tbsp. curry powder
      1 medium finely chopped onion
      1½ cup chicken broth
      ½ tsp. of coriander
      6 king prawns
      1 tsp. salt
      ½ tsp. ground black pepper
      1 tbsp. olive oil
      1 tbsp. tomato paste
Directions
  1. ​​ Preheat the air fryer to 370 degrees F.  Season the prawns with salt and pepper.
  1. ​​ Cook for 7 minutes.  Meanwhile, heat the olive oil in a large skillet. Once hot add the onion.
  1. ​​ Cook until soft. Sit in the curry, tomato paste, and coriander. 
  1. ​​ Cook, stirring, for 1 minute.
  1. ​​ Add the chicken broth and stir until smooth. 
  1. ​​ Remove prawns from the fryer and add to the sauce. 
  1. ​​ Serve and enjoy!

Crusted Halibut

Ingredients
      2 tsp. lemon zest
      1 tsp. salt
      ½ tsp. ground black pepper
      ¾ cup Panko bread crumbs
      ½ cup fresh parsley, chopped
      ¼ cup fresh dill, chopped
      4 halibut filets
      1 tbsp. olive oil
Directions
  1. ​​ Preheat the air fryer to 390 degrees F. 
  1. ​​ Combine all ingredients except halibut and olive oil in a food processor and pulse until the mixture is a fine crumb. 
  1. ​​ Gently coat the halibut in the mixture and place inside the fryer basket.
  1. ​​ Drizzle with olive oil and cook for 25 minutes. 
  1. ​​ Serve and enjoy!
