Ingredients

5 cups warm chicken broth

1 tsp. fresh rosemary, chopped

1 tsp. fresh thyme, chopped

¼ cup yellow onion, diced

2 cups butternut squash, diced small

3 tbsp. olive oil

1 tsp. salt

1 tsp. ground nutmeg

1 ¼ cups Arborio rice

½ cup dried cranberries, chopped

¼ cup grated parmesan cheese

Preheat the air fryer to 390 degrees F.

Place the squash in the air fryer basket and drizzle with 1 tbsp. of the oil.

Season with salt and nutmeg. Cook for 20 minutes.

In a skillet, heat the remaining oil. Add the onions, rosemary, and thyme, cook until onions are soft.

Then add the Arborio rice and cook until the rice is lightly browned. Add 1 cup of the broth, and stir until absorbed.

Repeat until all the liquid is absorbed and rice is tender.

Stir in the cooked squash, cranberries, and parmesan
