Butternut Squash Risotto

Ingredients
      5 cups warm chicken broth
      1 tsp. fresh rosemary, chopped
      1 tsp. fresh thyme, chopped
      ¼ cup yellow onion, diced
      2 cups butternut squash, diced small
      3 tbsp. olive oil
      1 tsp. salt
      1 tsp. ground nutmeg
      1 ¼ cups Arborio rice
      ½ cup dried cranberries, chopped
      ¼ cup grated parmesan cheese
Directions
  1. ​​ Preheat the air fryer to 390 degrees F. 
  1. ​​ Place the squash in the air fryer basket and drizzle with 1 tbsp. of the oil.
  1. ​​ Season with salt and nutmeg. Cook for 20 minutes. 
  1. ​​ In a skillet, heat the remaining oil. Add the onions, rosemary, and thyme, cook until onions are soft.
  1. ​​ Then add the Arborio rice and cook until the rice is lightly browned.  Add 1 cup of the broth, and stir until absorbed.
  1. ​​ Repeat until all the liquid is absorbed and rice is tender.
  1. ​​ Stir in the cooked squash, cranberries, and parmesan
  1. ​​ Serve and enjoy.

      1 (13.5-ounce) readymade pizza crust
      6-ounces of sliced pepperoni
      1 tbsp. of melted butter
      1 tsp. of black pepper

      1 tsp. of Italian seasoning
      12-ounces of mozzarella cheese, shredded
Directions
  1. ​​ Preheat the air fryer to 390 degrees Fahrenheit. 
  1. ​​ In a bowl combine the butter, salt, garlic powder, Italian seasoning, and black pepper. 
  1. ​​ Cut the pizza crust into 4-inch squares.
  1. ​​ Fill the middle of each square using the pepperoni.
  1. ​​ Add cheese on top.  Take one edge of each square and bring it to another end. Seal using a fork.

Ingredients
      3 baguettes
      1 onion, peeled and chopped
      1 (15-ounce) can of tomato sauce
      ½ cup of cheddar cheese, shredded
      1 pound of ground beef
      ¼ cup of panko breadcrumbs
      1 egg
      4 slices of provolone cheese
      1 tbsp. of olive oil
      1 tsp. of black pepper
      1 tbsp. of dried parsley
      1 tbsp. of dried oregano
      1 tsp. of salt
Directions
  1. ​​ Preheat the air fryer to 360 degrees Fahrenheit. 
  1. ​​ Combine the ground beef, egg, seasonings, breadcrumbs, and onion in a bowl. 
  1. ​​ Mix well and create meatballs using the hands. 
  1. ​​ Fry them in the air fryer for 15 minutes. 
  1. ​​ Put egg and stir until it is properly mixed 
  1. ​​ Cut the baguettes into small pieces and drizzle some olive oil.  Toast them in the air fryer for a minute or two. 
  1. ​​ In a pan add the tomato sauce and add to the air fryer. Cook for about 5 minutes. 
  1. ​​ Brush the baguettes with the tomato sauce, add the meatballs and cheese.
  1. ​​ Add to the air fryer one more time and wait for the cheese to melt.

      2-3 lb. pork loin, unseasoned
      1 pinch salt & pepper
      ½ cup soy sauce
      ½ cup ketchup
      ½ cup Worcestershire sauce
