1 lb. fresh mozzarella cheese, sliced into rounds

1 medium eggplant

1 tsp. salt

½ cup all-purpose flour

2 eggs, beaten

1 cup seasoned breadcrumbs

¼ cup olive oil

16 oz. jar marinara sauce
Directions
Peel and slice eggplant into ½” slices.
Place the eggplant rounds in a colander and toss them with 1 teaspoon of salt. Let them drain in the colander over a bowl in the sink for 45 minutes to remove excess moisture.
Mix breadcrumbs and olive oil in a medium bowl. Bread the eggplant rounds in batches by coating them in the flour, then the eggs and then the breadcrumbs.
Preheat air fryer to 390 F.
Place 4-5 slices of breaded eggplant into the fryer and air fry for 8 minutes.
Transfer fried eggplant to a non-stick cookie sheet and top with one tablespoon of marinara sauce and one slice of mozzarella cheese.
Broil eggplant until cheese bubbles and browns lightly.
Allow five minutes to cool before serving.

Rib Eye Steak

Ingredients

1 tbsp. onion powder

1 tbsp. garlic powder

1 tbsp. oregano

2 tsp. ground cumin

2 lb. ribeye steak

4 ½ tsp. salt

2 tbsp. ground black pepper

2 tbsp. paprika

1 tbsp. high-heat cooking
Directions
In a small bowl, mix all the seasonings to create a dry rub.
Rub seasoning into the surface of the entire ribeye.
Brush oil over the seasoned ribeye.
Preheat air fryer to 400°F
Place rib eye into fryer basket and air fry at 400°F for 7 minutes.
Gently flip rib eye with tongs.
Air fry at 400°F for an additional 7 to 10 minutes.
