POPEYE’S FAVOURITE GRILLED CHEESE SANDWICH
Popeye’s answer to any crisis…
YIELD: ONE SANDWICH (BUT ALLOW 1 OR 2 SANDWICHES PER PERSON)
2 slices dark rye bread
dijon mustard
2 thick slices Swiss or gruyère or cheddar cheese
4 to 6 fresh spinach leaves, trimmed, well-rinsed, and dried
2 tomato slices
pinch of nutmeg
pinch of black pepper
Generously spread bread with mustard, then layer with cheese, spinach leaves, and tomato slices. Sprinkle with pepper, dust lightly with nutmeg.
butter or oil
Heat butter or oil in a heavy skillet or griddle. Panfry sandwich on both sides until golden brown. Serve immediately.
