APPLE AND CHEDDAR COFFEECAKE

A delicious brunch cake.

YIELD: ONE 9˝ PAN

½ cup whole wheat flour

1 cup white flour

1 T. baking powder

2 t. cinnamon

½ t. salt

2 cup apple juice

2 T. sunflower oil

1 egg, beaten

3 T. honey

PREHEAT OVEN TO 375° F. Combine ingredients with whisk or electric mixer on low speed until well mixed. Scrape the sides of the bowl with a spatula.

1 cup grated cheddar cheese (medium or sharp)

1 medium apple, chopped

½ cup chopped walnuts or toasted sunflower seeds

Stir remaining ingredients into batter. Spread batter evenly into an oiled 9˝ pan. Bake for 20 minutes.

2 T. honey

1 T. apple juice

½ t. nutmeg

4 t. oil

Whisk together in a measuring cup and drizzle over the cake. Bake for another 5 to 10 minutes, or until a toothpick inserted in the centre of the cake comes out clean.
