GINGERBREAD PANCAKES

These pancakes are among the best in the world, I think They are adapted from a recipe featured at The Omelettry, a famous breakfast restaurant in Texas. A guaranteed cure-all for grumpiness or depression.

YIELD: 8 TO 10 HEFTY PANCAKES

3 eggs

2 T. honey

2 T. molasses

Beat together.

½ cup yogurt

½ to 2 cup water or soymilk

1 cup brewed coffee

Add to the eggs.

1 cup white flour

1½ cups buckwheat or oat or whole wheat flour

½ t. salt

1 t. baking powder

2 t. baking soda

1 t. allspice or cloves

1 T. cinnamon

1 T. ground ginger

1 T. ground nutmeg

In a separate bowl, combine all dry ingredients. Pour in the wet ingredients, mixing just enough to combine. DO NOT OVERMIX!

4 T sunflower or other light oil

Add oil to the batter and stir briefly. Add more liquid by the spoonful if needed to thin the batter. Ladle or pour batter (about 1 cup of batter per pancake) onto a hot, lightly oiled griddle or nonstick skillet. When air bubbles have formed, and then burst, flip pancake to brown the other side. Do not flip again. Serve hot with butter, margarine, apple butter, yogurt, or syrup.
