Many people know home-fried potatoes as an essential component of a deluxe breakfast. But homefries are also wonderful with tomato soup, or next to a tofu burger or tofu “hot dog” from your natural foods store. Next time you feel the need for some comfort food, boil or bake a few spuds for a down-home treat.
SERVES 4
3 to 4 T. oil
1 medium onion, diced
2 cloves garlic, minced
4 cups cooked potatoes, peeled and cubed
salt, pepper to taste
1 T. dried parsley
1 t. paprika
1 t. marjoram (optional)
1 t. dill (optional)
Heat oil in a large cast-iron skillet. Sauté onion and garlic for several minutes until onions begin to brown. Add seasonings and cooked potatoes. Cook over medium heat until potatoes are browned and crisp on all sides (about 15 minutes). Flip potatoes frequently with a metal spatula, scraping the bottom of the skillet to loosen the delicious crust. Serve hot.
This humble dish becomes a gourmet treat with the addition of several tablespoons of fresh herbs: parsley, dill, or basil are excellent. Experiment with cilantro! For a Southwest-style side dish, sauté onions and boiled potatoes with chili powder and some roasted canned green chilis, coarsely diced.
