A bag of breadcrumbs kept in the freezer makes an easy finish for casseroles.
YIELD: 1 TO 1½ CUPS
6–8 slices stale bread, toasted or plain pinch of oregano, sage, pepper
Break up bread or dry toast into chunks. Grind bread in food processor or blender with herbs, until reduced to fine crumbs. Use immediately, or store in the freezer.
Hint: Grind an entire loaf of bread at one sitting. Freeze in a large plastic bag, so that you can use a small portion whenever you need it.
