CREAMY SALAD DRESSING

This tasty salad dressing is swiftly assembled.

YIELD: 2 CUPS

1 cup lowfat yogurt

½ cup mayonnaise

3 T. lemon juice

1 clove garlic, minced

¼ cup minced green onions or chives

celery salt or herbed seasoning mix, to taste

With a fork or whisk, thoroughly blend all ingredients. Store refrigerated in an airtight container for up to 1 week. Shake before using.

HAVARTI CHEESE DIP

Creamy havarti cheese is blended with yogurt and just a hint of horseradish to make a sandwich spread or party dip for celery or crackers.

YIELD: 1½ CUPS

½ pound havarti, finely grated

½ cup yogurt

2 T. dijon mustard

1 to 2 t. horseradish (to taste)

Blend ingredients briefly in a food processor or blender, just until smooth.

4 green onions, diced

¼ cup fresh parsley, minced

salt, pepper to taste

Stir onions and parsley into cheese dip; season to taste. Chill. Best made 24 hours in advance, as the flavour improves overnight. Serve on crackers or bread, or as a dip with vegetables.
