COLD NOODLE SALAD WITH ADUKI BEANS
A chilled Oriental noodle salad with the flavour of sesame.
SERVES 4
2 T. toasted sesame oil
2 T. sunflower or other light oil
2 T. rice vinegar
1 t. honey
salt
hot chili oil or cayenne
pinch of nutmeg and powdered ginger to taste
Combine oil, rice vinegar and honey with seasonings to taste. Mix well.
6 oz. soba or udon noodles, cooked, drained and cooled
2 cups cooked, drained aduki beans
¼ cup each green onion slices, carrot slivers, snow peas
1 cup shredded Napa cabbage or bok choy
½ cup sesame seeds
Toss noodles, beans and vegetables gently with dressing. Garnish with sesame seeds.
