A very fast meal-in-a-bowl that features the vegetables
you have on hand. Curly ramen noodles make it filling,
and it’s ready in just over 20 minutes.
SERVES 4
4 cups water or vegetable stock
1 pkg. ramen noodles
Bring water to the boil in soup pot. Break up ramen noodles or drop whole into boiling water. Boil 12 to 15 minutes until noodles are tender. Stir occasionally with a fork to separate noodles.
3 cups of diced vegetables (choose from onion, carrot, celery, snow peas, corn, mushrooms, peppers, cabbage, broccoli)
1 clove garlic, minced
3 T. toasted sesame oil
½ t. dried ginger
½ t. nutmeg
While noodles are boiling, dice up vegetables. Heat oil in a wok. Add vegetables and seasonings. Stirfry 3 to 5 minutes. Add stirfried vegetables to noodles and simmer for 5 more minutes.
4 T. tamari
1 T. mirin or saki (optional)
Stir in the tamari (and mirin). Adjust seasonings to taste. Serve hot.
