ROMAINE AND PINE NUT SALAD WITH CITRUS DRESSING

A good salad combines a pleasing mix of flavours and textures with a refreshing dressing. Spinach leaves make an attractive substitute for the romaine.

SERVES 4

1 clove garlic, minced

zest and juice of 2 oranges or tangerines

¼ cup fresh minced parsley

1 to 2 T. balsamic vinegar

2 cup sunflower oil

salt, pepper to taste

Blend garlic, orange zest and juice, parsley, and vinegar. While blending or whisking, pour in the oil in a slow stream. Taste; adjust seasoning. Set aside.

1 large head romaine lettuce, rinsed and torn into small pieces

1 cup grated carrot

½ cup toasted pine nuts

1 cup cucumber slices

½ cup raisins

Toss vegetables and pine nuts together in a decorative salad bowl. Pass the dressing separately, or toss immediately before serving.
