RAJAH’S RICE

This aromatic presentation brings out the inherent excellence of basmati rice, adding exotic hints of cardamom and saffron. Superb with any Indian dish.

SERVES 4

2 cups water

1¼ cups white or brown basmati rice

4 bay leaf

5 cardamom pods

½ t. salt

pinch of saffron

Bring water to the boil in a pot with a closely-fitting lid. Add rice and seasonings. When the water has returned to the boil, reduce heat and cover. Simmer for 15 to 20 minutes (45 for brown basmati), or until rice is tender and all water has been absorbed. Remove bay leaf and cardamom pods. Serve hot.
