This simple, tangy dijon creme is also excellent over broccoli.
SERVES 4
1 head cauliflower
Break the cauliflower into florets. Steam for 10 to 15 minutes, until barely tender.
4 T. dijon mustard
cup lowfat yogurt
cup mayonnaise
2 to 3 T. milk
salt, pepper to taste
Mix dressing with a fork until thoroughly blended. Toss gently with the steamed cauliflower.
paprika
Sprinkle paprika generously over the cauliflower, and toss to spread the colour. Serve warm.
This dressing is also lovely with a chilled vegetable salad. Prepare the dressing; toss with lightly steamed vegetables (½ head cauliflower and ½ head broccoli broken into florets, 1 cup diced carrots, and 1 cup peas or snow peas.) Refrigerate for 2 hours; serve at room temperature. Very good to take to work if you have a fridge to keep it in.
