Scandinavian Fruit Dessert (Rødgrød Med Fløde)

1kg/2lb 4oz mixed berries (strawberries, redcurrants, raspberries, blackcurrants), rinsed and stalks removed
250g/9oz rhubarb, rinsed and chopped
250g/9oz/1¼ cups caster/granulated sugar, plus 1 tbsp for sprinkling
2.5cm/1in vanilla pod/bean
1–2 tbsp potato flour dissolved in a little cold water
Put the berries and rhubarb into a saucepan with 200ml/7fl oz/scant 1 cup water, the sugar and the vanilla pod/bean. Bring to the boil gently, cover with a lid and simmer over a low heat for 10–15 minutes, stirring from time to time. Remove from the heat and mix in the dissolved potato flour. Pour into a serving bowl and sprinkle with a thin layer of sugar to prevent a skin forming on the surface. Once cool, cover and chill in the refrigerator for about 30 minutes before serving.
Serve with cream or vanilla ice cream.
