Gooseberry Sauce

Serves 4

1 tbsp grapeseed oil

1 shallot, finely chopped

250g/9oz gooseberries, trimmed

3 tbsp sugar

1 tbsp red wine vinegar

a pinch of ground cloves

sea salt and freshly ground black pepper

Heat the oil in a small saucepan, then add the shallot and gooseberries and stir-fry for 1 minute. Add 3 tablespoons water, the sugar, vinegar and cloves. Cover with a lid and cook gently over a medium heat for 20–25 minutes until the gooseberries are very soft. Season to taste and serve hot with game, duck, oily fish and nut roasts.
