1/4 cup Dijon mustard
2 tablespoons fresh lemon juice
1 teaspoon ground fennel
11/2 teaspoons chopped fresh tarragon (1/2 teaspoon dried)
1 tablespoon honey
1/4 cup olive oil
salt and ground black pepper to taste
In a small bowl, whisk together the mustard, lemon juice, fennel, tarragon, and honey. Slowly drizzle in the oil, whisking constantly to form a thick sauce. Season to taste with salt and pepper.
