PEACH PARFAIT WITH AMARETTO CREAM

1 cup heavy cream, well chilled

2 tablespoons amaretto (almond liqueur)

2 tablespoons confectioners’ sugar

4 ripe fresh peaches

8 amaretti (crisp Italian almond cookies)

Whip the cream, amaretto, and sugar until stiff. Peel and slice the peaches. Crumble the cookies. In individual dessert cups or parfait glasses, layer the peach slices, cookie crumbs, and whipped cream, layering everything twice. Serve immediately.

VARIATION

Use about 2 cups of strawberries or pitted fresh sweet cherries instead of peaches. Crisp sugar cookies or ginger snaps can replace the amaretti, in which case you may wish to use 1 teaspoon of vanilla extract whipped into the cream rather than the amaretto.

This dessert really glorifies fresh peaches in their prime. The cream can be whipped several hours ahead and chilled, covered, but assembly of the parfaits should be at the last minute.
