An elegant breakfast casserole that is ideal for a bridal or Sunday brunch get-together.
2 eggs, beaten
2 c. milk
2 c. seasoned croutons
8-oz. pkg. shredded Cheddar cheese
1 T. dried, minced onion
1 T. dried parsley
1 lb. crabmeat
salt and pepper to taste
1/4 c. grated Parmesan cheese
Combine eggs, milk, croutons, Cheddar cheese, onion and parsley in a large bowl. Stir in crabmeat; sprinkle with salt and pepper. Spoon into a lightly greased 13"x9" baking pan; sprinkle with Parmesan cheese. Bake at 325 degrees for 45 to 55 minutes, or until a knife inserted into the center comes out clean. Serves 8.
Personalized votives are a snap to make. Cut a piece of parchment paper to fit around a votive holder. Write names on the parchment paper with a felt-tip pen. Simply wrap paper around votive and secure with double-sided tape.
