Fresh tomatoes and spinach turn this breakfast casserole into something extra special. I think it’s perfect for overnight guests.

1 c. buttermilk

1/2 c. onion, grated

1-1/2 c. shredded Monterey Jack cheese

1 c. cottage cheese

1 c. spinach, chopped

1 c. tomatoes, chopped

1/2 c. butter, melted

18 eggs, beaten

Mix all ingredients together; pour into a greased 13"x9" baking pan. Cover; refrigerate overnight. Bake at 350 degrees for 50 minutes to one hour. Serves 8 to 10.

Bacon curls make a tasty breakfast plate garnish. Just fry bacon until browned, but not crisp. Immediately roll slices and fasten each with a toothpick.
