Spice it up with hot sausage and Mexican-style Cheddar cheese.
2 lbs. ground sausage
1 dozen eggs, beaten
4-oz. can chopped green chiles
8 10-inch flour tortillas
8-oz. pkg. shredded Cheddar cheese
1 T. all-purpose flour
1 c. milk
Brown sausage in a skillet over a medium heat. Drain; reserve 2 tablespoons drippings in skillet and set sausage aside. Add eggs and chiles to skillet; cook and stir until eggs are done and set aside. Divide sausage, cheese and egg equally among tortillas. Roll up tortillas and place seam-side down in a lightly greased 13"x9" baking pan; set aside. Heat reserved drippings in skillet. Sprinkle with flour; stir. Add milk, stirring constantly, until mixture begins to thicken; pour over tortillas. Bake at 350 degrees for 10 to 15 minutes, until hot and bubbly. Serves 6.
To grate or shred a block of cheese easily, place the wrapped cheese in the freezer for 10 to 20 minutes...it will just glide across the grater!
