Curried Chicken

A tried & true recipe you’re sure to enjoy.

1 c. mayonnaise

1 c. all-purpose flour

1 onion, finely chopped

4 to 6 T. curry powder

5 c. chicken broth

2 c. cooked rice, divided

4 to 5 boneless, skinless chicken breasts, cooked, cubed and divided

10-oz. pkg. frozen French-cut green beans, cooked and divided

1 c. soft bread crumbs

1 T. butter

Mix mayonnaise, flour, onion and curry powder in a saucepan. Slowly stir in chicken broth; heat over medium heat until thickened but not boiling. Remove from heat; let cool slightly. In a greased 13"x9" baking pan, layer half the rice, half the chicken, half the green beans and half the sauce; repeat. Gently mix with a fork to let sauce sink in; set aside. Sauté bread crumbs in butter until golden; sprinkle over casserole. Bake at 350 degrees for 20 to 30 minutes, until heated through. Serves 4 to 6.
