This recipe is a natural alongside refried beans and corn cakes.
2 c. turkey, cooked and shredded
1-1/2 c. salsa, divided
1 c. sour cream
2 to 3 T. diced green chiles
8 10-inch flour tortillas
10-3/4 oz. can cream of chicken soup
2 c. shredded Mexican-blend cheese
Combine turkey, 1/2 cup salsa, sour cream and chiles. Spoon turkey mixture into tortillas; roll up and place seam-side down in an ungreased 13"x9" baking pan. Blend together soup and remaining salsa; pour over tortillas. Bake, uncovered, at 350 degrees for 30 minutes. Sprinkle with cheese and bake an additional 5 minutes, or until cheese is melted. Makes 6 to 8 servings.
To spice up familiar casserole recipes, use various cheeses like smoked hot pepper or Pepper Jack. Cayenne pepper, chopped pickled jalapeƱos or fresh jalapeƱo peppers will also turn up the heat!
