This rich seafood dish is tasty with garlic bread and spinach salad.
1 lb. frozen cooked medium shrimp, thawed, cleaned and chopped
1/2 lb. lobster, chopped
1/4 lb. crabmeat, chopped
4-oz. can sliced mushrooms, drained
1/4 c. butter
1/4 c. all-purpose flour
2 c. milk
salt and pepper to taste
1/4 t. paprika
2 t. fresh chives, snipped
2 t. fresh parsley, finely chopped
2 T. white wine or chicken broth
4 T. grated Parmesan cheese
Combine shrimp, lobster, crabmeat and mushrooms in a greased 1-1/2 quart casserole dish; set aside. In a medium saucepan, melt butter over medium-low heat; stir in flour until smooth and bubbly. Gradually add milk, stirring constantly. Continue to cook over low heat, stirring constantly, until thickened and bubbly. Stir in seasonings and wine or broth. Gently stir sauce into seafood mixture; sprinkle with Parmesan cheese. Bake at 350 degrees for 20 minutes; place under a broiler for one minute until golden on top. Serves 4.
