Deep Sea Delight

This scrumptious recipe is filled with 4 types of seafood!

3 T. plus 1-1/2 t. butter,
divided

1 c. onion, chopped

1-1/2 c. celery, chopped

2-1/2 c. milk

6 T. all-purpose flour

1/4 lb. Cheddar cheese, sliced

1/2 t. salt

1/2 t. pepper

1/4 lb. crabmeat, flaked

1/4 lb. lobster, flaked

1/4 lb. medium shrimp, peeled and cleaned

1/4 lb. scallops

Melt 3 tablespoons butter in a skillet; sauté onion and celery until tender. Set aside. Heat milk in a saucepan over medium heat. Mix in flour and remaining butter until well blended. Gradually blend cheese into mixture; add salt and pepper. In a medium bowl, combine onion mixture with cheese sauce mixture. Toss in seafood; transfer to a greased 11"x7" baking pan. Bake at 350 degrees for 25 minutes, until seafood is opaque and surface is lightly golden. Serves 4.
