Birthdays in our family have always been an occasion for a gathering. Each person, since their childhood days, has had the delight of choosing his or her special dinner for their big day. Without exception, this recipe for French Sea Scallops has always been a favorite.
1 lb. scallops, sliced into bite-size pieces
2 c. water
juice of 1 lemon
1 bay leaf
1/2 t. hot pepper sauce
1 t. dried, minced onion
3 T. butter
2 T. all-purpose flour
1 t. salt
1 c. light cream
2 egg yolks
1/2 c. grated Swiss cheese
2 T. white wine or chicken broth
Garnish: paprika
2 to 3 c. prepared rice
Place scallops in a saucepan; add water, lemon juice, bay leaf, hot pepper sauce and onion. Simmer for 5 minutes; drain and set aside. In another pan, melt butter over low heat and stir in hot pepper sauce, flour and salt. Gradually stir in cream. Cook over low heat, stirring constantly, until mixture thickens and comes to a boil. Add a small amount of egg yolk, stirring constantly, and then remaining egg yolks. Add cheese, wine or broth and scallops. Place in a lightly greased 11"x7" baking pan; sprinkle with paprika. Bake at 350 degrees for 10 to 15 minutes until golden. Serve with rice. Serves 4.
