Mince fresh garlic for the best flavor. Fresh ingredients really do make a difference in the taste.

24 large shrimp, peeled and cleaned

1/4 c. olive oil

1/4 c. fresh parsley, chopped

3 cloves garlic, minced

1/2 t. red pepper flakes

1/4 t. pepper

1/4 c. butter, melted

1/2 c. dry French bread crumbs

1/2 c. grated Parmesan cheese

Arrange shrimp in an ungreased 11"x7" baking pan; drizzle oil over shrimp. Combine the next 4 ingredients; sprinkle over shrimp. Cover and bake at 300 degrees for 15 minutes. Turn shrimp over. Drizzle with butter; sprinkle with bread crumbs and cheese. Bake, uncovered, for an additional 5 to 10 minutes. Serves 2.

If the kids can’t wait until dinner, mix up a quick snack mix for them to munch on. Stir together raisins, candy corn, nuts, chocolate-covered candies and cereal squares in a bowl...enjoy!
